Bread and Cheesecake - and Recipes -

I really like to cook - when I have time. It has become my Sunday morning ritual. Get up, get breakfast on, and bake, typically. I'm all about adding protein whenever I can, so I'll increase eggs, add some Greek yogurt, or some Protein Powder (flavored or not depending on what I'm making).

At Christmas I bought an Instant Pot. It's been fun to use, particularly for cooking chicken and shredding it, making instant-soup, baking potatoes, and making cheesecake!

Well, not quite cheese, and more of a flan, but yummy nonetheless.

Three Ingredient Cheesecake

3 eggs
3 cups Nonfat Greek Yogurt (Western Family brand tops the Protein scale at 24gms)
1 package sugar-free instant pudding (lemon and cheesecake have been our favorite)
Mix together (can add vanilla, lemon peel, almond extract, coconut, etc)
Pour into a greased glass container or spring-form pan
Pour 1 cup water in bottom of Instant Pot, put the rack inside, set the container on the rack. Seal, set for 30 minutes. Raise heat, bake, let heat come down for at least 15 minutes, before opening.
Open, refrigerate for at least 12 hours.
This can also be baked in the oven, same methodology. I just like that I can put this into the Instant Pot, run errands, come home, pop in the fridge!
Serve with some fresh fruit, fresh fruit syrup, toppings of your choice (Scott likes drizzling his with a little maple syrup)

Two Ingredient Dough

2 cups self-rising flour (you can make your own here; I'll try making this with WW flour soon)
2 cups Nonfat Greek Yogurt
And yesterday I added 2 eggs
Mix yogurt and eggs, add flour, mix until blended together, it will be sticky
Pour onto a floured surface, flatten to desired thickness
I've made "bagels" and sprinkled with Trader Joe's Everything but the Bagel seasoning. Roll out, cut into circles, make a hole with your finger, twirl until the hole is the right size, put on a greased baking sheet. Bake at 400 for 20 minutes.
I've made cinnamon rolls - pat out the same as bagels only thinner. Sprinkle with butter and sugar and cinnamon. Beginning at the widest section, roll, until all of the dough is one long tube. Cut into about 2-3 inch thickness, and place on a greased baking sheet. Bake at 400 for 20 minutes.
And Naan - kinda. Pat very thin, place on a lightly greased frying pan, cook one side, flip, cook the other.
